Harvest season is in full swing, and the YB kitchen team is diving headfirst into the abundance of juicy, sun-ripened grapes. Sourcing seasonal produce as close to home as possible is always at the heart of what we do — so when the chance to pick straight from the vine presents itself, we grab our baskets and get to work!

Once harvested, these vibrant grapes are gently simmered with bold red wine, a splash of red wine vinegar, and a touch of red wine grape juice, fresh from Piggs Peake. Slowly reduced to a sticky sweet & sour vino cotto, the result is a rich, velvety syrup that captures the essence of the fruit in every drop.

We’re pairing this deep flavor with the creamy indulgence of fresh stracciatella, the sweetness of garden-picked figs, and a punchy pancetta crumb for the perfect balance of sweet, salty, and savory.
